Now That’s a Peanut Butter Cookie!

Judy Ludy; I need help!

Me and my guy are crazy for cookies and have been looking for an extra decadent recipe for chocolate chip peanut butter cookies.  Even a peanut butter brownie recipe would do the trick! 

Watcha got for me? By the way, I just love this site.  Keep all the gossip and tidbits coming…

Dear Baked:

Have I got a recipe for you!  So decadent you won’t know what hit you, and very easy, as well!The basic recipe came from an old family recipe; however, I’ve embellished it and brought it up to date. 

Judy Ludy’s Chocolate Chunk Peanut Butter Cookies 

2 ¾ cups AP flour
1 ½ teaspoons baking powder
1 teaspoons baking soda
1 teaspoon salt (scant, as the peanut butter’s salty enough)
1 cup shortening (yes, shortening.  You’ll love the texture from it)
1 cup packed brown sugar
1 cup refined white sugar
2 eggs
1 cup peanut butter (not that natural crap either; true on, full fat peanut butter – your choice, smooth or creamy)
1 teaspoon vanilla
16 oz. semi-sweet baking chocolate (chopped into chunks)

Preheat oven to 350.

In a small mixing bowl, sift flour, baking powder, baking powder and salt.  Set aside. 

In a large mixing bowl, cream shortening, brown sugar and white sugar together until it’s light and fluffy.  Add eggs, one at a time, then add peanut butter and vanilla until incorporated.  Slowly add flour mixture until just incorporated; do not over mix, as you’ll get a tough batter.  Fold in chocolate chunks.   Chill for at least ½ hour. 

Pinch off a teaspoon of dough, and roll into a ball in the palm of your hand.  Place on cookie sheet, and make criss-cross effect with fork. 

Bake about 10 minutes, until puffy and golden brown.  Do not over bake.  Cookies should be crisp on the outside, and chewy on inside.
