Easy Brunch

The following is an easy brunch I made for friends of ours who just had their first baby. I affectionately refer to her as my little “Magnolia” and her daughter as the “Mint Julep” as “Magnolia” is originally from the south. She and her husband are thrilled with their new bundle, and with family and friends stopping by to visit, I suspected that things could be a little crazy. Who would have time to cook?

So, I offered to make brunch for her family, and also prepared several dishes that could be kept in the freezer. Some I froze in large portions and some in individual portions, so it would be convenient to make as much or as little as necessary. New babies require constant attention (so I hear), and what could be better than having food in the freezer to grab at a moment’s notice!

SATURDAY BRUNCH
Banana Oatmeal Pancakes Served with Warm Maple Syrup
Frittata with Feta Cheese, Sun-Dried Tomatoes and Fresh Basil
Crispy Maple Bacon
Grits with 3 Cheeses
Fresh Berries, Yogurt and Granola Parfaits
Streusel Sour Cream Coffee Cake
Orange Juice
Coffee and Teas
