I’m such a dork! I misread your request for Chicken Pasta Salad, and thought you asked for Chicken Salad!
Here’s my Chicken Salad recipe, minus the pasta. However, I don’t see why you couldn’t throw in some cooked pasta, and have instant Chicken Pasta Salad. If it became a bit dry, you could add in some more mayo or lemon juice!

Ludy’s Chicken Salad
2 boneless, skinless chicken breasts – boiled and cubed
¼ cup celery – diced
2 tablespoons capers – slightly chopped
½ cup good mayo
zest and juice of one lemon
salt and pepper to taste
In a large bowl, mix chicken, celery, capers, mayo and lemon juice together. Add salt and pepper to taste.
Serve on a bed of bibb lettuce with crackers of your choice on the side.
